This cool cocktail is a personal favourite, and will go down a treat at your next pool party
On my recent food tour to Cape Town, I spent time with Andre of Pienaar & Son. Not only did I get a crash course on the gin and vodka distilling process, but I tasted some smooth spirits.
Though I've been faithful to Tanqueray and Bombay Original gin for years, after tasting the Empire and Orient gins, I have no issue switching camps. As soon as I got home, I popped open a bottle of Empire, sliced up some watermelon and tweaked my tried-and-tested recipe to fit the new gin I'm committed to.
Why?
Because craft alcohol often has unique flavour profiles that mainstream products don't really experiment with.
If you're using craft gin, you can have a lot of fun playing with this recipe. If you're using a standard gin, stick to this recipe and you won't go wrong.
Ingredients
4 cups frozen watermelon
2 tablespoon lemon juice
250ml gin
Mint leaves to garnish
Directions
1. In a bowl, soak watermelon chunks in all the gin for 2 hours.
2. Add lemon juice to bowl.
3. Blend contents of bowl until thick slushie consistency. If the drink is too watery, add a few blocks of ice.
4. Place a few mint leaves in glass and watermelon wedge to garnish
Serve immediately.
