This spicy winter recipe will warm your insides, clear your airways and boost your immune system
Ingredients
1 tablespoon olive oil
1/2 chicken, cut into 4 pieces
1/2 red onion, cut into chunks
1 head of broccoli, cut into individual heads
1 cup of butternut, cubed
4 courgettes, sliced
1/2 red pepper, julienne
Pinch of salt
1 heaped teaspoon ground pepper
1 heaped teaspoon turmeric
1 heaped teaspoon berbere (or mild curry spice)
1 teaspoon cardamom
2 garlic cloves minced/chopped finely
1/2 cup of milk
Directions
1. Place pot on medium heat.
2. Add oil to warm pot
3. Sweat onions and garlic
4. Throw in a pinch of salt to draw out onion's moisture
5. Fry courgettes and peppers for 30 seconds
6. Add turmeric and berbere
7. Place chicken in pot to brown (2 minutes for each side)
8. Sprinkle black pepper and continue to turn chicken to cook evenly
9. Pour milk into pot
10. Add cardamom
11. Add butternut, making sure they are submerged in the milk
12. Cover pot and let simmer for 5 minutes.
13. Remove pot lid, add broccoli
14. Let milk gravy reduce on high heat for 2-3 minutes while broccoli cooks al dente.
Serve warm on it's own or with basmati rice
